Pasta/Quills with Four Cheese .Ingredients :
2,8oz(80grams) of Emmenthal or Gruyere cheese
2,8oz(80grams) of soft Taleggio cheese
3,5oz(100grams) of Sweet Blue cheese
1/4 cup (50ml) of heavy cream
1/3cup(80grams)of Parmesan cheese
a pinch white pepper
a pinch salt
1cup(100grams)of whole milk
14oz(400grams)of ridged pasta quills or any pasta of your choice .
Preparations :
Put apot with plenty of salt water on the cook and bring it to boil .
Prepare the cheese you will need for the sauce .
POur the milk and the heavy cream into the saucepan on a low heat, and add the parmesan cheese .
Dice the blue cheese and the taleggio cheese together with the milk and the heavy cream and the parmesan cheese . Stir with a wooden spoonuntil the cheeses are completely melted . Then add the salt and pepper . As soon as the water comes to a boil, add the pasta quills and boil them al dente , then drain and saute them for a few minutes in the saucepan together with the four cheese sauce .Put them in a serving dish and serve .
